WOOD-FIRED STONE OVEN

The use of a wood fired stone oven with high quality beech wood preserves all the characteristics of the dough yielding a crispy pizza crust.

Wood-fired baking is an ancient technique.
It is not just the Antico’s logo. It’s a basic aspect of Antico’s philosophy and distinctive approach.

Antico uses a wood-fired oven at 400° C (750 F ), for a quick cooking as in the traditional Italian pizzeria. This quick cooking enhances the organoleptic features of our products and our ingredients we use.

Pizzas are moved onto a refractory stone surface which is constantly kept clean from dust and soot thanks to rotating brushes.

We only use natural certified beech wood logs, without additives. Its flavour gives our products an inimitable taste. A high quality beech wood preserves all characteristics of the dough yielding a crispy pizza crust.

TOPPING BY HAND

Hand processing enables the use a wide variety of ingredients for each recipe and allows flexibility to create new, original recipes to satisfy our consumers’ needs.

Most topping ingredients are put by hand, respecting our artisanal vocation, for a pleasant product presentation. Toppings are fresh, ready to be cooked at home by the consumer.

Our toppings include a wide variety of combinations: cheese, vegetables, cold cuts, mushrooms, pesto and much more can be used to satisfy the demand for highly customized, innovative solutions.

Our production techniques and a correct balance between automation and handcraft guarantee the use of a wide variety of ingredients that show the fantasy and creativity of Italian cuisine.

Only fresh, selected GMO-free ingredients from the best Italian suppliers are used. Where possible, we only source local ingredients.
